BRAZED TENDER LOIN WITH GRILLED PEAR



Ingredients (4 people)
800g of tender loin
250g of pears
50g whole wheat bread
fleur de sel
Black pepper

Preparation
Cut the tender loin into 200g pieces and season with fleur de sel and black pepper. Grill the tender loin and finish cooking in the hoven. Slice the pears and grill with a little olive oil. Slice the bread into thin slices and put it in the hoven until it gets crunchy.
Plating
Arrange the pear into a fan, place the tender loin on top of the pear with the fleur de sel. Place the bread over the tender loin, season with pepper and decorate with the red wine vinegar reduction.
